Colour · aromas · taste

And what we are going to
taste .

The glass fills as you descend, and the colour changes with the region you pass through.

Dry white

Grape variety: Sauvignon blanc

The freshness of Graves, the minerality, the start of the day.

The eye: A pale, brilliant hue with silver highlights.

The nose: Citrus fruit, white flowers, white-fleshed fruit and vegetal freshness.

The palate: A lively, tense and fresh palate with a mineral and fruity finish.

At table: Arcachon Bay oysters

The pairing: the freshness and tension of the white wine naturally complement the briny salinity of the oysters.

Rosé

Grape variety: Merlot

Estuary summers, lunch in the open air, seafood cuisine.

The eye: A bright, pale hue with salmon-pink nuances.

The nose: Fresh red fruits, citrus and subtle floral notes.

The palate: A round and fresh palate, with a lovely expression of fruit.

At the table: Elvers, or prawns seared on the plancha

The pairing: the fruit and freshness of rosé pair wonderfully with summer, grilled and seafood cuisine.

Red

Grape variety: Cabernet Sauvignon

The depth of great terroirs, structure, night falling, and time standing still.

The eye: A deep, brilliant robe of intense ruby.

The nose: Ripe black fruits, spices and delicate woody notes.

The palate: A structured, generous palate with pronounced, elegant tannins, sustained by a lovely aromatic persistence.

At the table: Entrecôte steak cooked in the Bordeaux style

The pairing: the power of meat grilled over vine shoots, the depth of the Bordelaise sauce and the structure of a fully mature red. A cuisine with character!

Sweet

Grape variety: Sémillon

Botrytis, the sweetness of late harvests, foie gras, a dessert… or simply the pleasure of lingering.

The eye: A luminous golden robe with amber highlights.

The nose: Ripe and confit fruits, apricot, honey, flowers and sweet spices.

The palate: A creamy, rich palate, balanced by a freshness that lingers on the finish.

At the table: Pan-fried South-Western foie gras

The pairing: the richness and character of foie gras find balance in the freshness and sweetness of the sweet wine.
